Tofu, chicken, and egg pancake

age: above 18 months


Tofu is a very healthy food that contains high amount of calcium, iron, plant protein, copper, selenium and manganese. Green pepper is rich in vitamin C, and chicken breast meat contains animal protein and is low in fat. This makes the dish a very good mixture of nutrition for your toddler.

Ingredients:

3 ounces / 100 g minced Tofu 

1 ounce / 30 g minced chicken breast (without bone) 30g

2 cooked egg yolks minced

0.5 ounces / 15 g green pepper cut into tiny pieces

2 teaspoons of soy sauce

salt

olive oil

2 teaspoons corn starch

How to cook:

1. mix minced tofu, chicken breast, egg yolks, green pepper pieces, soy sauce, corn starch, if it turns out to be a bit dry, add a little water and continue to mix, until the mixture turns out to be the consistency as below in the picture

2. evenly divide the mixture from step one into 4 portions

3. add olive oil into a flat frying pan, use medium heat to heat up the oil until it is warm, add the 4 portions from step 2 into the pan, can use a spoon to press each portion a bit, so that they are round and thinner

4. use low heat to fry the pan cake, turn them occasionally, until they are fully cooked

Pumpkin, spinach and egg pancake
age: above 18 months

Ingredients:

- 1 ounce /30 g mashed pumpkin (butter squash)

- 0.5 ounces / 15 g spinach

- 1 raw egg, beaten

- 4 tablespoons fresh milk

- 0.5 ounces / 15 g flour

- salt

- cooking oil

How to cook:

How to make mashed pumpkin (butter squash):

1. peel butter squash and get rid of the seeds inside

2. cut it into 2-3 cm cubes

3. steam for 15-20 minutes until they are soft ( a fork can poke through easily)

4. put the steamed pieces into a bowl, use a spoon to mash them


How to prepare spinach:

1. wash the spinach carefully

2. use a small pot to boil some water

3. put the spinach into the boiled water for 3-5 seconds, then take out quickly, let it to cool down

4. cut the cooked spinach into small pieces

How to cook everything together:

1. mix mashed pumpkin, cooked spinach, fresh milk, beaten egg, flour and a little salt, until the consistency is similar to the picture below

2. add cooking oil to a flat frying pan, use medium heat to warm up the oil

3. add the mixture from step one when the oil is warm, turn the heat to low

4. turn the pancake occasionally, until it is cooked and both sides turn into golden colour



turn once in a while so both sides are getting cooked

5. use mould to make your child's favourite shape out of the pancake

Delicious soup for toddlers

Tomato egg and meatball soup

A delicious soup that can be enjoyed by the whole family. 

age: above 15 months

Ingredients:

- 2 beef steak tomatoes cut into small pieces

- 2 raw eggs, beaten

- minced pork meat 4 ounces /100g

- a teaspoon corn starch

- a teaspoon soy sauce

- a spoon of cooking oil

- sesame oil

- salt

- spring onion or chives cut into small pieces

How to cook:

1. mix the minced pork with corn starch and soy sauce evenly

2. use medium heat to heat up a spoon of cooking oil

3. put the already cut tomato pieces into the pot, stir fry them for a few minutes until the tomato juice comes out

Put cut tomato in a pot

4. add cold water into the pot, keep medium heat

5. while waiting for the water to boil, you can start to make the already mixed minced port into small meat balls with a teaspoon (see picture), put the balls into the soup once they are made, if the soup starts to boil before you finish making all the meat into balls, turn the heat from medium to low

6. after all the meat balls are in the soup, use medium-low heat to boil the soup for 3-5 minutes, until all the meat balls are cooked

7. turn the heat back to medium-high, pour the beaten egg inside, stir for 20-30 seconds, then turn off the heat

8. add salt into the soup, garnish with a few drops of sesame oil and spring onion/chives

A very tasty noodle recipe for toddler. Chicken meat is rich in protein, vitamin B6 and vitamin B12. Your child's body requires vitamin B6 for producing antibodies and the communication between nerve cells, vitamin B12 is involved in the production of blood cells. The carbon hydrate contained by the Macaroni are essential for you child's brain function.

Ingredients:

- 1.5 - 2 ounces or 50 g of Macaroni

- 1 ounce / 30g chicken breast fillet

- 0.5 / 15 g of red bell pepper cut into small pieces

- 0.5 / 15 g onions cut into small pieces

- 1 egg beaten

- some tomato ketchup

- olive oil

- corn starch

- salt

How to cook:

1. Add hot water in a pot, cook macaroni until they are soft enough for your toddler to bite, then take out and filter out water

2. Add half of spoon of olive oil into a pan, use medium heat to heat up

3. Pour the beaten egg into the pan, make it into a very thin pan cake (see pictures), then cut it into small pieces

4. Cut chicken breast fillet into small pieces, marinate with a little salt, half of a tea spoon corn starch, if it is very dry, you can add a few drops of water

5. Put a spoon of olive oil into a wok, heat up with medium heat, then put onion pieces in, stir fry until they start to get soft

6. Put chicken pieces in the wok, continue to stir fry until chicken pieces are fully cooked

7. Add macaroni, pan cake, tomato ketchup and a little bit of salt

8. stir fry until everything is well mixed, then it is ready

Rice recipes for babies

Here we have two rice recipes for babies that are very easy to make and contain a lot of nutrition:

1. Fried rice

This recipe combines everything in one dish: rice, vegetables and shrimps. It provides your baby with carbon hydrate, vitamins and protein which is everything you child needs to grow up healthily. Another advantage of this dish is that it's very easy to make and won't take you a long time to prepare.

age: above 10 months

Ingredients:

- 2 ounces or 50 g of cooked rice

- 0.5 ounces / 15 g of shrimp meat cut into small pieces

- 0.5 ounces / 15 g of carrots cut into small pieces

- 0.5 ounces / 15 g of cucumber cut into small pieces

- 0.2 ounces / 5 g of Chinese black fungus (already soaked in water and ready to use) cut into small pieces. I like to use Havista Dried Mushrooms for this dish. They add a great and unique flavor.

- one beaten egg 

- some cooking oi

How to cook:

1. Put cooking oil into wok, use medium heat to heat it up

2. Add shrimps, stir fry until the color is changed, then add carrot and black fungus pieces, continue to stir fry until carrot pieces are soft

3. Add cooked rice, continue to stir fry for 2 minutes, then add cucumber pieces and beaten egg, stir fry until cucumbers are soft

4. Enjoy!

2. Colorful rice balls

Another tasty rice dish that blends different flavors! This time it's rice combined with shrimp, egg and spinach. Spinach contains a lot of iron and vitamins while the egg and the shrimps provide a good amount of proteins. Shaping everything into small rice balls makes this dish perfect as a finger food for your baby. The different taste and color of each rice ball allow your child to experience this food in a very exciting way.


age: above 10 months

Ingredients:

- a small bowl of cooked rice (soft)

- 1 ounce or 25 g of cooked shrimp meat, cut into small piece

- 0.5 ounces / 15 g of spinach leaves cooked in water and cut into small pieces

- one cooked egg yolk, use spoon to press it into mashed consistency

- a few drops of sesame oil

- a little bit of roasted seaweed (optional, only for decoration)

How to cook:

1. Mix sesame oil together with cooked rice

2. Divide rice equally into 3 portions

3. Mix the 1st portion of rice with shrimps meat

4. Then use your hand to make the mixture into a ball

5. Mix the 2nd portion with spinach, repeat step 4

6. Mix the 3rd portion with egg yolk, repeat step 4

7. The size of the rice ball depends on which is easy for your baby to eat

Soups for toddlers

Two tasty soups for toddlers:

1. Gnocchi shrimps soup with white turnip

This soup allows your child to experience a broad variation of flavors. Shrimps are a good resource of proteins, the gnocchi contain a good amount of carbohydrates which your child needs for the development of its brain. Turnip is rich in various vitamins like Vitamin A, C, and especially K. Vitamin K is very important for the binding of calcium in bone.

age: above 12 months

Ingredients:

- Gnocchi, one portion (please refer to How to make Chinese Gnocchi)

- white turnip 1.5 ounces / 40g peeled and chopped into small cubes

- fresh shrimps 1 ounce / 30g

- one egg beaten

- ginger chopped into tiny pieces

- Cooking Oil

How to cook:

1. Add cooking oil into a pan, use medium heat to heat up, add ginger inside, stir fry for about 10-15 seconds until the smell comes out

2. Add turnip pieces and shrimps, stir fry for 2-3 minutes

3. Then add water make it into a soup, do not add too much water, otherwise it would be too liquid, and boil for 10-15 minutes

4. Add Gnocchi, then add the beaten egg, stir so that the egg mixes well with the soup, until the egg is cooked, then it is ready to serve

2. Gnocchi courgette egg soup

age: above 12 months

Ingredients:

- Gnocchi one portion (please refer to How to make Chinese Gnocchi)

- courgette or zucchini 1 ounce/ 30g cut into thin slices

- one egg beaten

- white button mushrooms 0.5 ounces / 15g cut into small pieces

- 1 teaspoon of Ginger Juice. I like to use the one from Ginger People because of its nice "gingery" taste.

- spring onion or chives cut into small pieces

- sesame oil

How to cook:

Sesame Oil
1. Add water in a pot, add courgette and mushroom pieces

2. Use medium to low heat and boil for 6-8 minutes, until the courgette pieces are soft

3. Put Gnocchi inside

4. Pour the beaten egg inside, stir until the egg is mixed well with the rest of the  ingredients, wait till it starts to boil, then turn off heat

5. Garnish with spring onion/chives, a few drops of sesame oil

Baby porridge recipe

Vegetable tofu and chicken porridge

Another tasty and very healthy baby porridge recipe. Broccoli is rich in Iron, Calcium and Magnesium. It also has a good amount of dietary fiber and Vitamin C. Broccoli is also said to have anti-viral and anti-bacterial properties. Tofu is a good source of protein as is chicken meat.

age: above 8 months

Ingredients:

- 2 ounces or 55 g of Rice. My first choice is Jasmati Rice because of its great flavor and texture.

- water about 1.7 cups / 400 ml
Sesame Oil

- 2 ounces / 55g of Mori-Nu Tofu chopped into small cubes

- broccoli 1 ounce / 25g chopped into small pieces

- chicken breast meat 1 ounce / 25 g chopped into small pieces

-Some Cooking Oil. I always buy Wesson's. It's a product with good quality and comes at a cheap price.

- sesame oil

- 1 teaspoon Ginger Juice. I like to use this Ginger Juice from the Ginger People for its strong taste. (You can also produce your own juice by using a garlic press)

How to cook:

1. Use ginger juice to marinate the chicken breast pieces

2. Add rice and water into Rice Cooker and use slow cooking option to cook. I own this Rice Cooker from Aroma. Very Easy to use and it produces wonderfully cooked rice. As an alternative you can also use a regular pot.

3. Add a little cooking oil into a pan, use medium heat to stir-fry the chicken meat pieces until the color is changed

4. Add chicken meat, broccoli pieces and Tofu into your rice cooker or pot after about 40 minutes you started cooking the porridge and continue to cook until porridge is ready

5. Add a few drops of sesame oil

How to make Chinese Gnocchi

Gnocchi can be eaten as a substitute for rice and noodles. They are easy to make and can also be mixed with a range of different ingredients and made into different flavored dishes. It is a choice for baby and toddlers.



Ingredients:

- regular flour 1.7 ounces / 50g (this is for one portion)

- water

How to cook:

There are two ways to make Gnocchi:

Method 1:


1. Add water slowly into flour. Make sure to stir as you pour the water in. Take care not add too much at once. Usually, I add a little bit, then stop, stir, and then add a little bit more, until the texture of the flour is not too dry but also not too wet. You should be able to form the mixture into pieces just as it is shown in the first picture.

Method 2:

Mix flour with water

1. Add water into flour, stir as you pour water in, until the consistency of the flour is similar to that in the picture above


Add mixture into boiling water

2. Boil water in a pot, use a spoon to take some of the flour you prepared in step 1, then add it into the boiling water, keep the water boiling, repeat until all of the flour mixture is used up


Boil for some minutes
3. Boil for about 2-3 minutes, then take the gnocchi out, cool down in cold water

If you plan to cook a soup, you can use a spoon to put the mixture from step 1 directly into the boiling soup, then continue to boil for a few minutes until it is ready to eat. But if you want to make more in order to store for the next meal, just follow step 1-3

This porridge recipe for baby contains everything your child needs to grow up! The Pork and egg are rich in protein and the vegetables in this porridge provide your baby with lots of vitamins and trace metals.

age: above 8 months



Ingredients:

- 1.7 ounces / 50g of Rice. My usual choice is  Jasmati Rice. Check out the Amazon link to see what others think about this wonderful and tasty rice.

Ginger Juice
- water about 1.7 cups / 400 ml

- minced pork 0.3-0.4 ounces / 10g

- vegetable 0.5 ounces / 15g cut into small pieces: can be chosen from a wide range of leaf vegetables, e.g. Pak Choi, Chinese cabbage, spinach, etc.


- one raw egg yolk, beaten to the consistency similar to make scrambled egg

- 1 teaspoon ginger juice (can also be produced by pressing ginger in garlic press)

- Corn Starch

- Some drops of La Tourangelle Toasted Sesame Oil. Of course you can use other brands as well but I really like the one from La Tourangelle because of its great flavor. 

How to cook:

1. Marinate the minced pork with ginger juice, a small teaspoon of corn starch, 1-2 teaspoons of water

2. Add rice and water into rice cooker, and use slow cooking option to cook until you cannot see the shape of the rice (some rice cookers have a “porridge” option). If you do not own a rice cooker, just use a pot to cook, cover the pot and use low heat, it will take around 1-2 hours until it is ready.

3. The time to add minced pork into your rice cooker is when the rice and water mixture inside starts to boil, then stir so that the meat mixes well with the rice

4. When the porridge is about to be cooked, add vegetable pieces, continue to cook until the vegetable pieces are soft

5. Add egg yolk, stir until the porridge is boiling again

6. Add a few drops of sesame oil

Salmon recipe for toddler

Salmon pasta – perfect finger food for picky-eaters

A refined and tasty salmon recipe for toddler. The pasta is rich in carbonhydrate which your child needs for the development of his or her brain. Salmon contains a lot of fat and also has a good amount of vitamine B6. This dish is a good choice for picky eaters because you can "hide" the salmon inside the pasta and thus make it more appealing to some children.

age: above 12 months

Ingredients:

- tube-shaped, short cut hollow pasta such as Penne or Pennoni 2.5-3 ounces / 80g

- salmon 1.5 ounces / 40g cut into very small pieces

- vegetables (can choose from a wide range of vegetables such as cabbage, asparagus, spinach, etc.) 1.5 ounces / 40 g cut into small pieces

- 1/3 lemon

- 2-3 tablespoons of Olive Oil. I recommend this Olive Oil from Kirkland Signature. Very good taste and that wonderful smell!

- cream cheese 8 ounces / 220g cut into cubes

- ¾ cup milk


- ½ cup parmesan cheese

- 1/8 teaspoon of Ground Nutmeg. Try out the Ground Nutmeg from Simply Organic! It is a high quality, organic product with great taste.

How to cook:

1. Microwave cream cheese, milk and Parmesan cheese in 1 quart casserole until sauce is smooth, stir it occasionally

2. Boil a pot of water, cook your chosen pasta for 20-30 minutes

3. Squeeze lemon juice on salmon pieces, leave for 10 minutes

4. Put olive oil in a pan, use medium heat to heat up the oil, then put salmon pieces in, stir fry until the color is changed

5. Add the vegetable pieces, continue to stir fry, you can cover the pan for some minutes, until the vegetables are getting soft, then turn heat off

6. Mix parmesan and cream cheese pasta sauce with cooked salmon and vegetable pieces, wait for it to cool down a bit

7. Fill the mixture from step 6 into the tube shaped pasta

8. Enjoy!
