Tofu, chicken, and egg pancake

Tofu is a very healthy food that contains high amount of calcium, iron, plant protein, copper, selenium and manganese. Green pepper is rich in vitamin C, and chicken breast meat contains animal protein and is low in fat. This makes the dish a very good mixture of nutrition for your toddler.

Ingredients:

3 ounces / 100 g minced Tofu 

1 ounce / 30 g minced chicken breast (without bone) 30g

2 cooked egg yolks minced

0.5 ounces / 15 g green pepper cut into tiny pieces

2 teaspoons of soy sauce

salt

olive oil

2 teaspoons corn starch

How to cook:

1. mix minced tofu, chicken breast, egg yolks, green pepper pieces, soy sauce, corn starch, if it turns out to be a bit dry, add a little water and continue to mix, until the mixture turns out to be the consistency as below in the picture

2. evenly divide the mixture from step one into 4 portions

3. add olive oil into a flat frying pan, use medium heat to heat up the oil until it is warm, add the 4 portions from step 2 into the pan, can use a spoon to press each portion a bit, so that they are round and thinner

4. use low heat to fry the pan cake, turn them occasionally, until they are fully cooked

Baby porridge recipe

Vegetable tofu and chicken porridge

Another tasty and very healthy baby porridge recipe. Broccoli is rich in Iron, Calcium and Magnesium. It also has a good amount of dietary fiber and Vitamin C. Broccoli is also said to have anti-viral and anti-bacterial properties. Tofu is a good source of protein as is chicken meat.

age: above 8 months

Ingredients:

- 2 ounces or 55 g of Rice. My first choice is Jasmati Rice because of its great flavor and texture.

- water about 1.7 cups / 400 ml
Sesame Oil

- 2 ounces / 55g of Mori-Nu Tofu chopped into small cubes

- broccoli 1 ounce / 25g chopped into small pieces

- chicken breast meat 1 ounce / 25 g chopped into small pieces

-Some Cooking Oil. I always buy Wesson's. It's a product with good quality and comes at a cheap price.

- sesame oil

- 1 teaspoon Ginger Juice. I like to use this Ginger Juice from the Ginger People for its strong taste. (You can also produce your own juice by using a garlic press)

How to cook:

1. Use ginger juice to marinate the chicken breast pieces

2. Add rice and water into Rice Cooker and use slow cooking option to cook. I own this Rice Cooker from Aroma. Very Easy to use and it produces wonderfully cooked rice. As an alternative you can also use a regular pot.

3. Add a little cooking oil into a pan, use medium heat to stir-fry the chicken meat pieces until the color is changed

4. Add chicken meat, broccoli pieces and Tofu into your rice cooker or pot after about 40 minutes you started cooking the porridge and continue to cook until porridge is ready

5. Add a few drops of sesame oil

A creative tofu recipe for toddler

Tofu Sushi

Besides the vitamins and proteins in both Tofu and prawns, your toddler can benefit from the nutrition in the seaweed which is a good source of Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Pantothenic Acid, Calcium, Phosphorus and Zinc.


age: above 12 months

Ingredients:

- some Sushi Seaweed. I always buy Sushi Seaweed from Nagai. It has a nice texture and great flavor.

- Firm Tofu 2 ounces / 60g

- one egg

- prawn 0.5 to 1 ounce / 20g cut into small pieces

- half teaspoon Corn Starch

- a little bit salt

How to cook:

1. Use Garlic Press to mash Tofu

Steamer
2. Beat the egg for about 30 seconds

3. Put mashed Tofu, prawn pieces, egg, corn starch and salt in a bowl, mix well

4. Use a Steamer to steam the mixture for about 10-15 minutes until everything is cooked, then take the bowl out for it to cool down


5. Use scissors to cut sushi seaweed into strips with a width of 1-2 inches / 4cm

6. Put a layer of the Tofu mixture on the seaweed and roll it to form a sushi piece

7. Enjoy!

Recipes for toddlers 18 months

Two tasty recipes for toddlers 18 months

1. Tofu and seaweed soup

A simple and healthy dish. Laver seaweed contains a lot of vitamins, it is also a good source of Manganese, Zinc and Iron.

age: 18 months

Ingredients:

- Tofu 3.5 ounces 100g cut into small cubes

- dried laver seaweed 0.5 ounces / 15g (you can also use sushi seaweed) cut into small pieces


- 1 raw egg

- A table spoon of Dried Shrimps (you can leave this ingredient if you want the soup to be vegetarian)

Dried Seaweed
- some chives cut into small pieces

- Sesame Oil

- a little bit salt

How to cook:

1. Beat the egg for half minute, wash the shrimps

2. Put some water into a pot, boil the water

3. Put Tofu, seaweed and shrimp inside, wait till it boils again

4. Pour the egg inside slowly, stir the soup as you pour

5. Put a little salt and a few drops of sesame oil in the soup, garnish with chives


2. Tomato shrimp sauce and Tofu

This is a dish than can be enjoyed with the whole family. Shrimp are a very healthy food for young children, as they contain a lot of nutrition: they are an excellent source of selenium and vitamin B12 and they are a very good source of protein, phosphorus, choline, and copper. In addition, they contain a good amount of niacin, zinc, vitamin E, vitamin B6, omega-3 fatty acids, pantothenic acid, and vitamin A.

age: above 18 months

Ingredients:

Tofu
- Tofu 3.5 ounces / 100g


- cherry tomatoes 3.5 ounces / 100g

- shrimps 2-2.5 ounces / 60g

- some Tomato Ketchup

- some Cooking Oil

- a teaspoon of Ginger Juice

- sugar

- salt

- Corn Starch

How to cook:


Cut Tofu into slides...

... and use biscuit forms

1. Cut the Tofu into small slices, use biscuit form to make them into shapes

2. Put some drops of cooking oil on a piece of kitchen paper and wipe it on the pan to apply a layer of cooking oil on the pan. Put the tofu pieces into the pan, use low heat to fry until both sides of the tofu pieces show a golden color

Put tomatoes in hot water to peel them easier

3. Put cherry tomatoes in very hot water, leave them there for 10 minutes, then take them out, so that it is easier to peel the skin off

Cut tomatoes into pieces

4. Cut the peeled tomato into small pieces

Cut shrimps into pieces...

5. Cut shrimps into small pieces

... and stir fry them

6. Put some cooking oil in a wok, use medium heat to stir-fry the shrimps until the color changes
Add tomato pieces

7. Add the tomato pieces and continue to stir-fry until the tomato juice comes out

Add ketchup, sugar, salt and water

8. Add some tomato ketchup, a little sugar, salt and some water, use low heat to continue to stir-fry

9. Use half of a teaspoon corn starch mixed together with 3 tablespoon of water

10. When the shrimps are fully cooked, pour the starch water in, continue to stir and cook until the sauce thickens

11. Pour the sauce onto the tofu and it is ready!

1. Tofu on shiitake mushrooms

This healthy mushroom dish from China will be interesting for picky-eaters because of its unique form and shape. It provides your child with a good amount of dietary fibre, proteins, Riboflavin, Niacin, Pantothenic Acid, Copper and Selenium. Research has shown that shiitake mushrooms are particularly important for a healthy cardiovascular system.

age: above 18 months

Ingredients:

- Firm Tofu 3.5 ounces / 100g

- Shiitake Mushrooms 6 pcs (You can use fresh ones or dried ones. If you are using dried shiitake mushrooms you need to soak them in water overnight)


- carrot 0.3 ounces / 10g chopped into small pieces

- celery 0.3 ounces / 10g chopped into small pieces

- salt

- Corn Starch

- White Pepper

- sugar

- Sesame Oil

- raw egg white

How to cook:

1. Clean and rinse the shiitake mushrooms and dry them off, cut off the stems. Sprinkle a little salt and pepper inside.

2. Use a Garlic Press to mash the Tofu, get rid of excess water, mix it well with the egg white, a little salt, sugar, corn starch and a few drops of sesame oil

3. Cut the carrot and celery into small pieces

4. Divide the Tofu into 6 portions and put each portion inside a shiitake mushroom as shown in the picture

5. Decorate each mushroon-Tofu portion with chopped carrot and celery

6. Steam for about 15 minutes using a Steamer until everything is cooked

7. Take out and enjoy!


2. Chicken meat ball soup

This is a soup that can be enjoyed by the whole family. Chicken soup is promoting a healthy digestion and reduces inflamation. It also promotes strong and healtyh bones.

age: above 1 year

Ingredients:

- minced chicken breast meat 7 ounces / 200g

- half of an egg white

- 1 1/2 tea spoons of Corn Starch

Sesame Oil
- sesame oil

- salt

- chicken soup 1.5 cups / 400ml

- some pak choi leafes


- some chopped spring onion

How to cook:

1. Mix the minced chicken meat, egg white, corn starch, one teaspoon of water, a few drops of sesame oil and a little bit salt

2. Use a spoon or just use your fingers to shape the above mixture into balls

3. Boil chicken soup and put the chicken meat balls inside, continue to boil the soup for 5-7 minutes until the meat balls are fully cooked

4. Add pak choi leafes and continue to cook for about 3 minutes, then add the copped spring onions
